Chewy Soft Ginger Christmas Cookies

These cookies get their base from a boxed gingerbread mix. They're soft and chewy and slightly spicy.

  • 1 package Gingerbread Mix
  • 1 stick of butter softened
  • 1 egg
  • 1/4 cup granulated sugar


  1. Preheat oven to 350F.
  2. Pour mix into a bowl.
  3. Add butter and egg and stir until a soft dough forms.
  4. Chill in freezer for 5-10 minutes. Scoop rounded tablespoons of dough, roll in sugar, and bake on an ungreased sheet for 8-10 minutes.
  5. Do not over bake.
