  • 1 pound green beans trimmed
  • 2 small yellow squash sliced into half moons
  • 1 tablespoon olive oil
  • 6 ounces feta cheese crumbled
  • 2 teaspoons chopped mint


  1. Heat olive oil on medium heat in a large saucepan
  2. Add green beans and squash and saute until tender.
  3. Pour into serving dish, add feta and mint.
  4. Salt and pepper to taste.
