Double Chocolate Monster Cookie Sandwiches

These chocolate monster cookie sandwiches are such a delight to make with little ones, and they're a great way to get them involved in the kitchen!

For Cookies:

  • 1 cup butter softened
  • 1 ½ cups granulated sugar
  • 2 eggs at room temperature
  • 2 teaspoons vanilla extract
  • 2 cups flour all purpose
  • 2/3 cup cocoa powder
  • ¾ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 ½ cups chocolate chips semi sweet

For Buttercream Frosting:

  • ¼ cup butter softened
  • 2 cups confectioner's sugar
  • ½ teaspoon vanilla extract
  • 1 tablespoon half and half



  1. Preheat oven to 350 degrees F.
  2. Combine dry ingredients (flour through salt) in a medium bowl.
  3. In a large bowl, beat butter and sugar until light and fluffy.
  4. Add eggs and then vanilla and beat until thoroughly mixed.
  5. Add the dry ingredients and stir until well blended.
  6. Mix in the chocolate chunks.
  7. Drop by rounded tablespoons onto ungreased cookie sheets.
  8. Bake for 10 minutes in the preheated oven, a minute or so longer than just set.
  9. Cool for one minute on the cookie sheets before transferring to wire racks to cool completely.
  10. To make the buttercream, beat butter and 1 cup confectioners' sugar together in the bowl of a stand mixer fitted with the paddle attachment.
  11. Add half and half and vanilla extract.
  12. Add up to one more cup of confectioner's sugar, beating after every addition until buttercream is smooth but still thick.
  13. To assemble the cookies, spoon frosting into a Ziplock bag. Twist closed and snip one corner with scissors, squeezing frosting to make a piping bag.
  14. Pipe a mound of buttercream onto one cookie and sandwich with another cookie.
  15. Repeat for the remaining cookies.
  16. Roll sides of sandwich in sprinkles.
  17. Pipe two dots of frosting on each sandwich.
  18. Place two M&Ms on top of frosting and press to adhere.
  19. Press two candy corns onto the frosting in the middle to make fangs.
  20. Refrigerate or keep in an airtight container at room temperature for up to 3 days.
