Ingredients

  • 2 cups cubed watermelon
  • 3 cups arugula
  • 5 mint leaves sliced thinly
  • 1/2 cup feta cheese crumbled
  • juice of one lemon
  • 3 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • salt and pepper to taste

Instructions

  1. Combine watermelon, arugula, mint and feta in a salad bowl.
  2. To make dressing, whisk the lemon juice and vinegar together in a small bowl.
  3. Add olive oil slowly, whisking to combine.
  4. When ready to serve salad, pour dressing over salad and toss to incorporate.
