I prefer to make curd in the microwave, but you can follow this same recipe, heating it in a glass bowl set over a saucepan of simmering water, until it thickens and coats a metal spoon.

Ingredients
3large egg yolks
1cupsugar
1tablespoonfinely grated grapefruit zest
1teaspoonfinely grated lemon zest
1stickunsalted buttermelted
2tablespoonsfresh lemon juice
1cupfresh grapefruit juicestrained
Instructions
In a microwaveable bowl, mix sugar, butter, zest and egg yolks.
Add grapefruit and lemon juice and whisk.
Cook in 1 minute increments on 100% power in the microwave until it coats the back of a metal spoon, about 5-7 minutes.
Whisk after every minute.
Pour into sterile jar or container and refrigerate.
