Green Beans and Yellow Squash with Feta and Mint

Ingredients

  • 1/2 pound green beans, washed trimmed
  • 2 yellow squash, washed and sliced into half moons
  • 3 tablespoons olive oil
  • 2 cloves garlic, peeled and sliced thinly
  • 4 ounces feta, crumbled or cubed
  • 1 tablespoon chopped mint
  • 1 tablespoon chopped green onion, white and green parts

Instructions

  1. Heat garlic in olive oil in a large saucepan over medium heat. Cook, stirring, until fragrant.
  2. Add squash and green beans to saucepan. Stir, coating green beans with garlic oil and turn up the heat to medium-high. Cook until slightly colored and green beans are tender, about 7-10 minutes.
  3. Remove from heat and plate green beans on a platter or in a bowl. Garnish with feta, mint, and green onion. Enjoy!
