One of my favorite things to do with my kids (5 and 2) is bake. I’m a sucker for any sort of dessert, and my children, unfortunately, have inherited my sweet tooth. On the plus side, they’re always willing to help out in the kitchen, as long as they get to “sample” the finished product. Because Halloween is almost upon us, I thought it would be a great time to share a favorite spooky treat of ours: Double Chocolate Monster Cookie Sandwiches. Yes, including children in a project involving sprinkles and frosting is most likely to end up in a mess (and the end result might not be stunning) but the smiles on their sticky faces are totally worth it.

Chocolate monster cookie sandwiches make a fantastic treat for a kid’s Halloween party. They are a favorite in our household. I love them because they’re so versatile. We got the idea to make these because we had leftover candy “googly” eyes and rainbow sprinkles. You can do any type of cookie, sprinkles, or filling. The kids like them because, well, is there anything not to like about freshly baked cookies and buttercream frosting?

If you want to go the from-scratch route, follow the recipes for the cookies and frosting. (And if you’re a super overachiever, why not try your hand at Food52’s homemade candy corn? I have yet to make it, but there’s a lot of October left.) In case you’re pressed for time and/or not a baker, grab your favorite cookie mix. You can even grab a tub of prepared dough and frosting. If you do, skip to the decorating steps.

All parents have trouble with picky eaters sometimes. It’s worth a try to ask them to help out for mealtimes. I’ve found my kids are 100% more likely to eat what I offer if they’ve had a hand in the preparation, and this goes for things like broccoli and beef stir-fry as well as baked goods. Mine are always 200% more likely to eat the latter.  I assemble the chocolate monster cookie sandwiches and then let my 5-year-old decorate them. Seeing his pride at doing something in the kitchen all by himself is worth a few crooked “fangs” and errant bat sprinkles.

Double Chocolate Monster Cookie Sandwiches

Ingredients

For Cookies:

  • 1 cup butter softened
  • 1 ½ cups granulated sugar
  • 2 eggs at room temperature
  • 2 teaspoons vanilla extract
  • 2 cups flour all purpose
  • 2/3 cup cocoa powder
  • ¾ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 ½ cups chocolate chips semi sweet

For Buttercream Frosting:

  • ¼ cup butter softened
  • 2 cups confectioner’s sugar
  • ½ teaspoon vanilla extract
  • 1 tablespoon half and half

Instructions

  1. Preheat oven to 350 degrees F.
  2. Combine dry ingredients (flour through salt) in a medium bowl.
  3. In a large bowl, beat butter and sugar until light and fluffy.
  4. Add eggs and then vanilla and beat until thoroughly mixed.
  5. Add the dry ingredients and stir until well blended.
  6. Mix in the chocolate chunks.
  7. Drop by rounded tablespoons onto ungreased cookie sheets.
  8. Bake for 10 minutes in the preheated oven, a minute or so longer than just set.
  9. Cool for one minute on the cookie sheets before transferring to wire racks to cool completely.
  10. To make the buttercream, beat butter and 1 cup confectioners’ sugar together in the bowl of a stand mixer fitted with the paddle attachment.
  11. Add half and half and vanilla extract.
  12. Add up to one more cup of confectioner’s sugar, beating after every addition until buttercream is smooth but still thick.
  13. To assemble the cookies, spoon frosting into a Ziplock bag. Twist closed and snip one corner with scissors, squeezing frosting to make a piping bag.
  14. Pipe a mound of buttercream onto one cookie and sandwich with another cookie.
  15. Repeat for the remaining cookies.
  16. Roll sides of sandwich in sprinkles.
  17. Pipe two dots of frosting on each sandwich.
  18. Place two M&Ms on top of frosting and press to adhere.
  19. Press two candy corns onto the frosting in the middle to make fangs.
  20. Refrigerate or keep in an airtight container at room temperature for up to 3 days.
